Drunken Orange Chicken

Time: 90 minutes to prepare and cook, overnight to prep
Serves: 4 people
4 medium sized chicken breasts
1 large onion, sliced
1 large orange, sliced in rounds
10 whole garlic cloves
1 cup of gold tequila
1 cup orange juice
1 tsp cayenne pepper
In a large bowl or large plastic bag, add the 4 uncooked chicken breasts, tequila, orange juice, and cayenne pepper. Cover the bowl with saran wrap or seal the plastic bag. Let marinate overnight in the refrigerator.
Once the chicken breasts have marinated and you are ready to roast, set the oven to 400°F. Prepare a baking sheet with parchment paper that is oiled. Place the chicken breasts on the tray and scatter the sliced onions, oranges, and garlic cloves around them. Sprinkle with salt, pepper, and a generous glug of olive oil.
Bake in the pre-heated oven for 45 minutes, or until skin is crisp and golden brown and the juices run clear. The onions, oranges, and garlic should also be golden and crisped.
Serve in your dish of choice and garnish with herbs, such as thyme (pictured).
