Vegetable Fritatta

Preheat Oven: 375
Serves: 6-8
Time Duration: 50 minutes



6 eggs
4 stalks of asparagus, sliced
New potatoes, pre-boiled and sliced
Handful of frozen or fresh peas
½ cups shredded parmesan cheese


  1. Preheat the oven to 375°F.

  2. In a large mixing bowl, whisk together the 6 eggs.

  3. Add the remaining ingredients and mix until combined.

  4. Pour the mixture into a greased 9 ½ inch pie pan.

  5. Place on bottom rack of 375 oven and bake until top turns golden and eggs mixture is cooked through, approximately 40-45 minutes.

  6. Remove from oven and let cool for 10 minutes before serving.
