Pineapple Express

Serves: 1 person



2 oz spiced rum

¾ oz fresh lime juice

¾ oz simple syrup (equal parts sugar and water)

1½ oz pineapple juice

Mint sprig

Grilled pineapple wedge, for garnish


  1. Shake the all the ingredients in a cocktail shaker with ice.

  2. Double strain into a large rocks glass and serve on the rocks.

  3. Top with cracked black pepper and garnish with grilled pineapple wedge.
