Sweet Potato Nachos

3 large sweet potatoes

Extra virgin olive oil

2 cups black beans

1 bag of spinach

2 bunches of scallions, sliced

1 red onion, sliced

1 cup shredded cheddar cheese


  1. Preheat oven to 325°F.

  2. Clean the sweet potatoes thoroughly. Carefully cut the potatoes in thin slices, approximately ¼ inch thick.

  3. Cover a baking sheet with parchment paper and place potato slices on the baking sheet to make a nice even layer of slices. Drizzle with extra virgin olive oil and a sprinkle of salt. Place on top rack of oven and bake the potatoes for 20 minutes. Take the potatoes out of the oven and flip the chips (they should be a little crispy on the side that was facing up and soft and warm on the bottom). Bake for an additional 15-20 minutes.

  4. Once the potatoes are baked and crispy on both sides, remove from oven. Place them on a plate and top with the spinach, black beans, shredded cheese, scallions, and red onions. Serve with a side of your favorite salsa.
